Created in 2017, the Group Bourdoncle is a leader of bistronomy in France. The group is majority owned and managed by Thierry Bourdoncle, a passionate entrepreneur from a family of brewery owners from Aveyron. The group has 21 establishments located in Paris (Durand Dupont, Mabillon, Le Hibou...), in Normandy, Arcachon and Megève.
For nearly 25 years, Thierry Bourdoncle has developed a clear offer: locations and places of exception with strong identities, a culinary proposal of quality and a particularly attentive service justifying a high average ticket (circa €40). In 2000, Chef Maurice Guillouet (ex-Tour d'argent and Ritz) joined the group to create seasonal menus, favoring local products from the best suppliers in France, in order to offer a gourmet and high quality cuisine.
